Produced in the state of Zacatecas, a few miles from the Tequila Valley,Derrumbes Zacatecasis made from 100% blue agave, orAgave Tequilana Weber Azul, more commonly used in tequila production. The agave are cooked in underground in hornos, crushed by tahona, fermented with wild yeast and distilled in small copper pot stills. The flavour is that of a traditional mezcal with earthiness, gentle smoke, roasted agave and peppery spice.
