Don Mateo de la Sierra presents Manso de Sahuayo (previously known as Cenizo). While this agave now called Manso de Sahuayo is endemic to the municipality of Sahuayo, Michoacan. Emilio Vieyra works with local farmers there to source the best agaves possible.
The variety gives a crystalline and clean mezcal with good density. Offers complex and refined aromas, notes of toast, hazelnuts, walnuts and toasted almonds, in addition to flowers and ripe fruits such as strawberry, raspberry and some melon. On the palate, notes of dried chiles are observed, like the chile pasilla, the chile guajillo and the chile negro tatemados and in the end offers the freshness of the herbal notes.
