The Macallan takes a unique approach to its aging with the 12 Year Double Cask. New American oak barrels are first seasoned with Spanish sherry, and then used as an aging vessel for The Macallan whisky for at least 12 years. This is then blended with a more traditional European cask aged Macallan.
