A touch of reduction on the nose leaves a smoky allure. It continues with flinty savor on the rich, rounded and generous palate where notions of red apple, dried lemon peel, orange pith and yeast appear with concentration and expressiveness. It’s lovely now but certain to evolve.
Pair with Waldorf salad, porcini tarte tatin, or roast pork loin with apples.
