Sauvignon Blanc has a spectrum of flavors I love, and by using a combination of winemaking techniques and blending varietals into the Beringer Founders Estate Sauvignon Blanc, I find that I can get more of those flavors into the wine.
The part of the wine that begins in barrel has a richness, almost a fatness of texture and a distinct, spicy flavor, while the stainless steel fermented portion has crispness, vibrancy, and a restrained herbal/grassy varietal character. Semillon, the classic blending grape of white Bordeaux, softens the wine and brings hints of peaches and other stone fruits, while the small amount of Chardonnay adds an element of complexity and additional richness.
