Caymus Vineyards produces two Cabernets Sauvignons from Napa Valley, the Napa and the venerable “Special Selection”. Now they have added the first new Cab in eons under the California appellation. This classic, sumptuous, extravagant Caymus Cabernet from vineyards throughout California delivers in spades. Caymus owner and winemaker Chuck Wagner seeks out special pockets of land that have often been overlooked but hold the potential to make great Cab, based on the belief that when you find similar soils and climate, you can produce similar wine. Generally speaking, stony soils, south facing slopes and moderately warm conditions are the key elements that make dark, rich and good-tasting Cabernet.
