Extremely subtle aromas of toasted oak, yellow flower and a whiff of dill waft out of the glass. The firm palate offers yellow apple and nectarine peels and a hint of oak.
Kados from Duca di Salaparuta is a white wine made from 100% Grillo grapes. The grapes grow in siliceous clay soil, 300 meters above sea level on the north-western Sicily. The grapes are picked by hand early in the morning the first half of September. The grapes are then pressed and the juice is transferred into new oak barrels.
The wine is let to ferment for 40 days. The wine is then in late November, poured into glass lined cement tanks and is kept in the chilly basement until the end of the following spring. The wine is bottled and stored for more than 3 months.
