Pinot Noir is a labor of love for many, one of the finest yet rewarding grapes to grow. However, Burgundy’s biggest red wines show that it is undoubtedly worth the effort. It is actually the only red variety allowed in Burgundy.
Terroir: Small village-level parcels (En Billard, La Justice, etc.), clay and limestone soil.
Viticulture: Organic (uncertified) converting to biodynamic methods.
Vinification: 100% de-stemmed, indigenous yeast fermentation, minimal intervention. Aged for 18 months in barrel (20% new).
